Butternut Squash and Sausage Pasta

Why We Like It

This is comfort food at its best -- plus, it's an incredibly tasty reason to take advantage of in-season butternut squash.  We used a slightly spicy sausage and it gave this pasta a nice kick!

Cook the Pasta:

  • 6 oz whole wheat pasta (of your choice, such as rotini or penne)

Bring a medium pot of water to a boil and cook pasta according to package directions.  Drain, but SAVE ONE CUP OF THE PASTA COOKING WATER!

Saute the Squash:

  • 1 Tbsp olive oil
  • 3 cups butternut squash (peeled, seeded, and cut into bite size pieces)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Add oil to a large skillet over medium high heat.  Add everything else and cook for 8-10 minutes, stirring occasionally, until squash is tender.  Transfer squash to a plate and set aside.

Cook the Onion and Sausage:

  • 1 white onion (chopped)
  • 2 links pork sausage (chopped, or about 1/2 lb ground pork, spicy if available)

Add to the skillet where you cooked the squash.  Cook for 5-8 minutes, stirring occasionally, until onion is tender and sausage is cooked through.

Add the Rest:

  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup parmesan cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Add to the skillet along with the butternut squash, 1 cup of pasta cooking water, and cooked pasta.  Stir to combine and cook 3 minutes on medium heat until sauce thickens slightly.

Serve and Enjoy!

  • 2 Tbsp fresh parsley (chopped, OPTIONAL)

Serve topped with chopped fresh parsley if desired.
