Why We Like It

Sloppy joes with a delicious Asian flair!  The kids devoured these, which is always a bonus!

Make the Coleslaw Topping:

  • 2 cups coleslaw mix (mix of cabbage and carrots, shredded)
  • 2 green onions (sliced)
  • 1 1/2 Tbsp rice wine vinegar
  • 1 Tbsp sesame oil

Add to a medium size bowl and stir to combine.  Refrigerate until sloppy joes are ready.

Cook the Meat and Bell Pepper:

  • 1 Tbsp olive oil
  • 1 lb ground turkey (or ground chicken, or lean ground beef)
  • 1 small green bell pepper (chopped, or use 1/2 of a large bell pepper)

Add oil to a large skillet over medium high heat.  Add turkey and bell pepper and cook for about 8 minutes until turkey is cooked through.

Add Next:

  • 3 Tbsp low sodium soy sauce
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp honey
  • 2 Tbsp tomato paste (no salt added)
  • 2 Tbsp ketchup
  • 1 tsp garlic powder
  • 1 tsp toasted sesame oil
  • 1/4 tsp ground ginger
  • 1/4 tsp crushed red pepper flakes

Add to the skillet and cook for one minute, stirring constantly.

Finish the Sloppy Joes:

  • 1 cup coleslaw mix (mixture of cabbage and carrots, shredded)

Add to the skillet, along with 1/2 cup to 3/4 cup of water (use coleslaw mixture, not coleslaw topping you made earlier).  Bring to a boil, and then reduce heat to medium low and simmer for 5 minutes or until mixture has thickened.

Toast the Hamburger Buns:

  • 4 whole wheat hamburger buns (of your choice, or whole wheat English muffins)

Toast the buns in the oven (350 degrees for about 3 minutes) or in the toaster.

Serve and Enjoy!

Serve the sloppy joe mixture on toasted buns topped with the coleslaw topping.

Quick Tips

If you have sodium concerns, you can reduce the amount of soy sauce to 2 Tbsp.
