Why We Like It
Arugula (also called “rocket”) is a delightful, peppery green from the cruciferous family. Often used in mixed greens, it’s also incredible by itself. If you are new to arugula, this homemade orange dressing will quickly make you a fan.
Toast Seeds:
- 1/4 cup pepitas (also known as pumpkin seeds, or sunflower seeds)
Add to a small dry skillet. Cook over medium heat for about 3 minutes or until toasted and fragrant. Remove from the skillet to halt the cooking and set aside to cool.
Make the Dressing:
- 2 Tbsp olive oil
- 2 Tbsp dijon mustard
- 1 tsp honey
- 1/4 tsp orange zest (grated orange peel, OPTIONAL)
- 1 Tbsp orange juice (juice from one clementine orange)
- 2 tsp rice wine vinegar
- 2 Tbsp fresh cilantro (chopped)
- 1/2 Tbsp toasted sesame oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Add to a small bowl or mason jar and whisk or shake to combine. Set aside.
Put it all Together:
- 4 cups arugula
- 2 green onions (green tops included, sliced)
- 2 clementines (or small oranges, peeled and sections cut in half)
- 1/4 cup feta cheese (OPTIONAL)
Add to a large bowl along with the toasted pepitas. Add some of the dressing and toss to coat. (You may not use all of the dressing but it is so good, you will want to save it for another salad!)

Quick Tips
Instead of using processed orange juice, consider juicing a fresh orange. It will add a pop of deliciously fresh flavor to this homemade dressing.
