Why We Like It


We were intrigued with the idea of “burgers in a bowl,” so we experimented with our Banh Mi Burger.  Let’s just say we were blown away!  The flavor and texture combination, with the quick-pickled veggies (which you can make ahead of time), fresh herbs and Sriracha “mayogurt” are amazing!  And the leftovers are perfect the next morning with an egg on top — we will be craving these again soon!

Quick Pickle the Veggies:

  • 1 medium cucumber (cut in half and sliced)
  • 1 cup carrots (shredded)
  • 6 radishes (sliced)
  • 1 jalapeno (sliced, seeds are OPTIONAL)
  • 1 cup white vinegar (distilled white vinegar)
  • 1 Tbsp kosher salt
  • 1 Tbsp sugar

Add veggies to a large quart size mason jar (or 2 pint size jars).

Separately, add everything else, along with 1 cup of water, to a small saucepan and bring to a boil.  Reduce heat slightly and continue to simmer for about 5 minutes until salt and sugar are dissolved.

Immediately pour the liquid over the veggies until they are completely submerged.  Set aside to cool to room temperature.  Then seal the jars with an air-tight lid, shake to evenly distribute the liquid and any seasonings, and place the jar (or jars) in the refrigerator.

Prepare the Sriracha "Mayogurt:"

  • 1/4 cup nonfat plain yogurt
  • 1/4 cup mayonnaise
  • 1 to 2 Tbsp sriracha
  • 1 Tbsp lime juice (juice from half of a lime)
  • 2 garlic cloves (or 1/2 tsp garlic powder)
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Add to a small bowl and stir to combine.  Place in the refrigerator until ready to serve.

Cook the Rice:

  • 1 cup brown rice

Cook the rice according to package directions.  Set aside when done.

(This may make more rice than you need for this recipe, but there are plenty of ways to use the leftovers!)

Prepare the Ground Beef:

  • 1 lb lean ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder

Add beef and seasonings to a large skillet over medium high heat.  Cook about 10 minutes until cooked through and no longer pink.

Put It All Together:

  • 6 cups fresh spinach (or greens of your choice)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup fresh sprouts (or microgreens, OPTIONAL)

In each person’s bowl, start with a base of greens.  Then, add a portion of beef, rice, pickled veggies, and mayogurt sauce.  Top with fresh basil, cilantro, and sprouts or microgreens if desired.
