Why We Like It
A few simple ingredients transform into a creamy, dreamy dessert! Load it up with fresh berries and it's the perfect way to satisfy a sweet craving!
Melt the Chocolate:
6 oz dark chocolate chips (or your choice of dark chocolate, 60% or higher)
Place in a microwave-safe bowl (breaking into pieces if necessary). Microwave on high for 30 seconds. Stir. Microwave longer if needed, stirring every 15-30 seconds. (You can also heat on the stove top by placing in a double boiler over water. Heat and stir just until melted.) Let cool slightly.
16 oz ricotta cheese (part skim or whole, your choice)
1/4 cup almond milk (or coconut milk or skim milk)
1/2 tsp vanilla extract
Place in a food processor or add to a medium size bowl and use a hand mixer. Mix until combined. Add warm (not hot) melted chocolate and process or mix until well combined and velvety smooth, stopping to scrape down the sides with a spatula as needed.
Serve and Enjoy!
1 pint fresh raspberries (or strawberries, quartered)
2 Tbsp fresh mint (OPTIONAL)
Scoop 1/4 cup of mousse into serving bowls or small glasses. Top with about 6 raspberries or 2 strawberries.
In our experience, you can use either whole or part-skim ricotta, but depending on the brand, whole ricotta may get smoother than part-skim. You may need to blend the part-skim version longer to get a smoother consistency.
